Why do some Hispanics have two or three last names?

For instance, their name might be like Jose Gonzalez Rivera? Or something Humberto Ortiz Morales? I noticed that sometimes some names might look like they have three last names and not just two (or is it middle name and two last names?) So how come they have 2 last names and some Hispanics have only 1 last name??
